Sautauthig and a First/Last Celebration of Cooperation

The harvest feast- now known as the “first Thanksgiving”- between the Wampanoags and the English settlers at Plymouth, Massachusetts, in 1621, was a brief celebration of unity.

Sautauthig, a Wampanoag dish, was likely served at the feast. The measured recipe was originally at plimothplantation.org but has since been removed. An unmeasured, perhaps more authentic recipe:

SAUTAUTHIG

water

dry samp

dried, crushed blueberries

optional: milk, salt, butter, maple syrup or honey 

Heat water until almost simmering. Add samp while stirring. Reduce heat, cover, and simmer until thickened, stirring occasionally. Add blueberries and stir. 

 

If desired, add any optional ingredients and stir.

Pickle Recipes

Tom Rubnitz’s Pickle Surprise:

Alton Brown’s Deep-Fried Pickles:

approximately 2 1/2 – 3 quarts peanut oil
1 quart dill pickles
1 cup buttermilk
2 cups cornmeal
1 tablespoon kosher salt
 

Place enough peanut oil in a 4 – 5-quart cast iron Dutch oven to come halfway up the side. Place over medium-high heat to fry at 390 – 400 degrees F.  

Remove pickles from brine and quarter lengthwise. Pat dry with paper towels.

Pour buttermilk in a shallow dish. Mix cornmeal and salt in a separate dish.

Dip pickle spears, 1 at a time, first in buttermilk, then in cornmeal/salt, then repeat.

Carefully place each spear in hot oil and fry until golden brown, approximately 2 minutes. Fry 3 – 4 pickles at a time. Maintain constant temperature of 390 – 400 degrees F. Transfer pickles to cooling rack set over baking sheet. Cool 5 minutes.

Not long after 9-11 I flew to Hawaii in a trench coat. Underneath I wore a skimpy sheer camisole (no bra) and long pants. I was asked to remove my coat to go through security. I started to slip my coat off my shoulders, and the security guy blushed and waved me through. On the plane, the passenger sitting next to me kept insisting I share her sandwich with her. She reached into her purse and casually pulled out a standard kitchen knife. Then she cut her sandwich in half while I braced myself for the SWAT team that didn’t show up. The rest of the flight was without incident. Once in Hawaii, I waited several hours for my luggage to show up.
