So-called Ginger Chicken

An especially good dish, we see it here garnished with mint leaves.

    I’ve never seen a (nearly) wordless recipe before- that’s an interesting way of presenting it.

    Here’s the recipe:

    Good Food

    For a really excellent Thai dish, round up the following: some rice; some sliced ginger (use a two-inch segment of ginger root); some coarsely-chopped fresh mint leaves; about five boneless, skinless chicken breasts, cut into rather thin slices; six cloves of chopped garlic; one red onion, chopped up; a mixture of one teaspoon sugar, two tablespoons soy sauce, and two tablespoons fish sauce; one chili pepper of whatever variety, chopped into narrow slices (you can use additional chilis, according to your desired level of hotness); and a quarter-teaspoon crushed red pepper.

    Saute onion and garlic in some oil.

    Add chicken and cook till opaque/white.

    Add chili pepper, crushed red pepper, and ginger.

    Add mixture of sugar, soy sauce, and fish sauce.

    Serve with rice. Garnish with mint leaves.

    This dish is fantastic. I basically followed instructions on page 52 of Kelly Simon’s _Thai Cooking_.
